Linguica Sausage

Linguica is the Brazilian pork sausage that traditionally opens a churrasco.

Garlicky, coarsely ground and grilled until the casing snaps, linguica is usually one of the first skewers to reach your table. It is a good early round while you are still working through the gourmet bar.
