Picanha
Picanha is the cut that defines Brazilian churrasco: the top sirloin cap, seasoned with coarse salt, skewered in a horseshoe curve and grilled over open flame.
Our gauchos carve picanha table-side, giving you the crisp, salted outer edge first and rarer slices as the skewer works its way in. It arrives as part of the full rodizio service, so you can take as many slices as you like alongside the gourmet bar. Ask your carver for a well-done outer cut or a rare center slice and they will bring the skewer back around.
