Filet Mignon

The most tender cut on the rotation, served plain or wrapped in bacon depending on the skewer.

Filet mignon is mild and exceptionally tender, which makes it a good starting point for guests new to a Brazilian steakhouse. Bacon-wrapped filet adds salt and smoke without overwhelming the cut. Both come around regularly through the evening.
